The joke about Souss tagines is that they hold so much of the flavor after each use that after a while you don't need to add spices and seasoning to your receipes anymore. It becomes built-in the tagine. This tagine is not glazed. When seasoning this tagine for first use, please be generous on the olive oil. This process mysteriously makes an important difference in flavor and adds strength to your tagine.
This tagine can be used on stove top (low heat) as well as in the oven (up to 350F).
